Place a pan on high heat stove and add 250ml oil to it and heat
Deep fry the cut brinjals, onions and green chillis separately and keep aside
Add 3 tbsp of oil to a separate pan, once heated add pandan leaves, curry leaves, cinnamon and ginger garlic, sauté for a while
Add mustard powder, pepper powder, turmeric, curry powder, vinegar & sugar, Maggi coconut milk, salt to taste and mix well
let the mixture boil
Add fried brinjals, green chilli, onions to it
Mix well for a while, serve to a bowl & enjoy it warmly
